Ingredients

  • 3 medium Onions
  • 150 g Chickpea flour (besan)
  • 2 tbsp Rice flour
  • 1 tsp Cumin seeds
  • 1 tsp Coriander powder
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Ground cumin
  • 0.5 tsp Red chili powder
  • 2 tbsp Fresh coriander (cilantro), chopped
  • 1 medium Green chili, finely chopped
  • 1 tsp Salt
  • 120 ml Cold water
  • 0 as needed Vegetable oil (for frying)

Directions

Step 1

Peel and slice the onions into thin half-moon slices. Place the sliced onions in a large mixing bowl.

Step 2

Add the chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, ground cumin, and red chili powder to the bowl with the onions.

Step 3

Add the chopped fresh coriander, green chili, and salt to the bowl. Mix well to combine and ensure the onions are coated in the dry ingredients.

Step 4

Gradually add the cold water, a little at a time, mixing continuously. The mixture should be thick enough to coat the onions but not too runny.

Step 5

Heat vegetable oil in a deep saucepan or fryer over medium heat until the oil reaches 180°C (350°F). Ensure the oil is hot enough by dropping a small portion of the batter into the oil; it should sizzle and float to the surface immediately.

Step 6

Using a spoon or your hands, drop small portions of the coated onion mixture into the hot oil. Fry in batches, ensuring not to overcrowd the pan.

Step 7

Fry the bhajees for 3-4 minutes, turning occasionally, until they are golden brown and crispy.

Step 8

Remove the fried bhajees with a slotted spoon and place them on a plate lined with kitchen paper to drain excess oil.
