Ingredients

  • 2 tablespoons olive oil
  • 2 large yellow onions
  • 0.5 cup dried apricots
  • 0.5 cup raisins
  • 2 tablespoons brown sugar
  • 3 tablespoons apple cider vinegar
  • 0.25 teaspoons ground cinnamon
  • 0.25 teaspoons ground allspice
  • 0.5 teaspoons salt
  • 0.25 cup water

Directions

Step 1

Peel and thinly slice the yellow onions into half-moons.

Step 2

Roughly chop the dried apricots into small pieces.

Step 3

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 4

Add the sliced onions to the skillet and cook, stirring occasionally, for 15-20 minutes until they are soft and golden brown. Lower the heat if necessary to avoid burning.

Step 5

Once the onions are caramelized, add the chopped apricots, raisins, and brown sugar to the skillet. Stir well to combine.

Step 6

Pour in the apple cider vinegar and water, then sprinkle in the ground cinnamon, ground allspice, and salt.

Step 7

Reduce the heat to low and simmer the mixture, stirring occasionally, for 20-25 minutes until the relish has thickened and the flavors are well combined.

Step 8

Taste the relish and adjust the seasoning, adding more salt or a splash of vinegar if needed.

Step 9

Remove the skillet from the heat and let the relish cool to room temperature before serving.

Step 10

Store any leftovers in an airtight container in the refrigerator for up to one week.
