Ingredients

  • 250 grams Shortcrust pastry
  • 3 medium Red onions
  • 2 tablespoons Butter
  • 1 teaspoon Fresh thyme
  • 1 teaspoon Sugar
  • 150 grams Soft goat's cheese
  • 3 large Eggs
  • 200 milliliters Heavy cream
  • 100 milliliters Milk
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Nutmeg

Directions

Step 1

Preheat your oven to 180°C (350°F) and lightly grease a 9-inch tart or flan tin.

Step 2

Roll out the shortcrust pastry on a floured surface to fit the tart tin. Carefully press it into the tin and trim the edges. Prick the base with a fork and refrigerate for 15 minutes.

Step 3

Line the pastry with baking parchment and fill with baking beans or rice. Blind bake for 15 minutes, then remove the parchment and beans, and bake for another 5 minutes until lightly golden. Set aside to cool.

Slice the red onions thinly. Heat the butter in a large frying pan over medium heat. Add the onions and thyme, and cook for 10-15 minutes, stirring frequently, until the onions are soft and caramelized.

Add the sugar to the onions and cook for another 2 minutes until slightly sticky. Remove from heat and let cool.

In a mixing bowl, whisk together the eggs, heavy cream, milk, salt, black pepper, and nutmeg until smooth.

Spread the caramelized onions evenly over the base of the cooled pastry shell. Crumble the goat's cheese over the onions.

Pour the egg and cream mixture over the onions and goat's cheese, filling the tart shell evenly.

Bake in the preheated oven for 30-35 minutes, or until the custard is set and the top is golden. Let cool for 10 minutes before serving.
