Ingredients

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 2 tbsp taco seasoning
  • 0.5 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup shredded cheddar cheese
  • 0.25 cup fresh cilantro, chopped (optional)
  • 1 lime, sliced into wedges
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Heat a large, deep skillet or Dutch oven over medium-high heat. Add the olive oil and ground turkey, cooking until the turkey is browned and crumbled, about 5-7 minutes. Season with a pinch of salt and pepper, then remove the turkey to a plate and set aside.

Step 2

In the same skillet, add the diced onion and bell pepper. Sauté for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
