Ingredients

  • 3 medium, peeled and cubed potatoes
  • 300 grams, cleaned and halved white button mushrooms
  • 400 milliliters coconut milk
  • 250 milliliters water
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 0.5 teaspoon red chili powder
  • 1 teaspoon (adjust to taste) salt
  • 2 tablespoons, chopped fresh cilantro

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Add the chopped onion and sauté for 4–5 minutes until soft and translucent.

Stir in the grated ginger and minced garlic. Cook for 1–2 minutes until fragrant.

Add the chopped tomatoes and cook for 5 minutes, stirring occasionally, until the tomatoes soften and break down.
