Ingredients

  • 4 pieces Chicken thighs (bone-in, skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 3 cups Chicken broth
  • 1.5 cups White rice (long grain)
  • 1.5 cups Cheddar cheese, shredded
  • 0.5 cup Heavy cream
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional)

Directions

Step 1

Season the chicken thighs with salt, black pepper, and paprika on both sides.

Step 2

Heat the olive oil in a large, deep skillet or Dutch oven over medium heat.

Step 3

Sear the chicken thighs skin-side down for 4-5 minutes until golden brown. Flip and cook for another 3 minutes. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, add the diced onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Deglaze the pan by pouring in the chicken broth, scraping any browned bits from the bottom with a wooden spoon.

Step 6

Stir in the white rice, ensuring it is evenly distributed in the liquid.

Step 7

Nestle the chicken thighs back into the skillet, skin-side up, on top of the rice.

Step 8

Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 25-30 minutes, or until the rice is tender and the chicken is cooked through (internal temperature should reach 165°F).

Step 9

Remove the chicken thighs from the skillet and set aside on a plate.

Step 10

Turn off the heat and stir the shredded cheddar cheese, heavy cream, and frozen peas into the rice until the cheese is melted and the mixture is creamy.

Step 11

Return the chicken thighs to the skillet, placing them on top of the cheesy rice mixture.

Step 12

Garnish with chopped fresh parsley, if desired, and serve immediately.
