Ingredients

  • 500 grams chicken breast
  • 1 cup white rice
  • 1.5 cups water
  • 1 cup pineapple chunks
  • 1 medium (diced) red bell pepper
  • 1 medium (diced) green bell pepper
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • 2 tablespoons vegetable oil
  • 2 cloves (minced) garlic
  • 1 teaspoon (minced) ginger
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks (sliced for garnish) scallions
  • 1 teaspoon (for garnish) sesame seeds

Directions

Step 1

Cut the chicken breasts into bite-sized pieces. Season with salt and black pepper and set aside.

Step 2

In a small bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar to create the sweet-and-sour sauce. Set aside.

Step 3

In another small bowl, mix cornstarch and 2 tablespoons of water to create a slurry. Set aside.

Step 4

Heat a large, deep skillet over medium heat and add the vegetable oil.

Step 5

Add minced garlic and ginger to the pan and cook for 30 seconds until fragrant.

Step 6

Add the chicken pieces to the pan and cook for 4-5 minutes until lightly browned on all sides.

Step 7

Push the chicken to one side of the pan and add the diced red and green bell peppers. Sauté for 2 minutes to slightly soften.

Step 8

Add the white rice, water, and pineapple chunks to the pan, stirring to combine everything evenly.

Step 9

Pour the prepared sweet-and-sour sauce over the mixture and stir well. Bring the mixture to a boil.

Step 10

Reduce the heat to low, cover the pan with a tight-fitting lid, and let it simmer for 18-20 minutes, or until the rice is cooked and the liquid is absorbed.

Step 11

Remove the lid and stir the cornstarch slurry into the skillet. Cook for another 1-2 minutes, allowing the sauce to thicken.

Step 12

Turn off the heat and let the dish rest for 5 minutes.

Step 13

Garnish with sliced scallions and sesame seeds before serving.

Step 14

Serve warm and enjoy your One Pan Sweet Sour Chicken with Rice!
