Ingredients

  • 4 pieces Slices of bread
  • 4 pieces Large eggs
  • 2 tablespoons Butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 cup Cheddar cheese (optional)
  • 1 tablespoon Chopped parsley (optional, for garnish)

Directions

Step 1

Use a small round cookie cutter or the rim of a glass to cut out a circle in the center of each slice of bread. Save the cut-out circles for later use.

Step 2

Heat a large non-stick skillet over medium heat. Add 1 tablespoon of butter and let it melt, swirling to coat the pan.

Step 3

Place two slices of bread (or as many as can fit in your skillet without crowding) into the skillet.

Step 4

Crack one egg into the hole of each slice of bread, being careful not to break the yolk.

Step 5

Season the egg with a pinch of salt and pepper.

Step 6

Cook for 2-3 minutes or until the egg whites begin to set. Then flip the bread and egg carefully with a spatula.

Step 7

Cook for another 2-3 minutes on the other side, depending on how runny or firm you like your yolk.

Step 8

If desired, sprinkle shredded cheddar cheese over the bread and egg during the last minute of cooking to melt.

Step 9

Remove the cooked 'One Eyed Monsters' from the skillet and repeat the process with the remaining butter, bread, and eggs.

Step 10

Toast the bread circles cut from the center in the same skillet until golden and serve on the side or use them for dipping.

Step 11

Garnish with chopped parsley if desired. Serve immediately and enjoy your whimsical breakfast creation!
