Ingredients

  • 4 pieces bone-in pork chops
  • 4 medium-sized russet potatoes
  • 2 medium-sized yellow onions
  • 3 tablespoons olive oil
  • 3 minced garlic cloves
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 0.5 cup chicken broth
  • 2 tablespoons butter
  • 2 tablespoons fresh parsley

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the potatoes and slice them into 1/4-inch rounds. Set aside.

Step 3

Slice the onions into thin rounds and separate the rings.

Step 4

Season the pork chops on both sides with 1 teaspoon of salt, 1/2 teaspoon of black pepper, and the smoked paprika.

Step 5

Heat 1 tablespoon of olive oil in a large, oven-proof skillet over medium-high heat. Sear the pork chops for 2 minutes per side until golden brown. Remove from the skillet and set aside.

In the same skillet, add the remaining olive oil and sauté the onions for 3-4 minutes until softened. Add the minced garlic and cook for 1 minute until fragrant.
