  • 4 pieces Eggs
  • 2 tablespoons Whole milk
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoons Olive oil
  • 0.5 cups Cooked breakfast sausage (crumbled or finely chopped)
  • 0.5 cups Shredded cheddar cheese
  • 2 tablespoons Chopped green onions
  • 8 pieces Egg roll wrappers
  • 2 tablespoons Water
  • 2 cups Vegetable oil (for frying)

Directions

Step 1

In a medium bowl, whisk together eggs, milk, salt, and black pepper until well combined.

Step 2

Heat a non-stick skillet over medium heat and add olive oil. Pour the egg mixture into the skillet and cook, stirring occasionally, until the eggs are scrambled and just set. Remove from heat.

Step 3

Stir in cooked sausage, shredded cheddar cheese, and chopped green onions into the scrambled eggs. Mix well and let the mixture cool slightly.

Step 4

Lay an egg roll wrapper on a flat surface with one corner pointing towards you (like a diamond shape). Spoon about 2 tablespoons of the egg mixture into the center of the wrapper.
