Ingredients

  • 6 large Eggs
  • 2 cups Baby spinach
  • 1 medium Potatoes
  • 4 slices Bacon
  • 2 tablespoons Pine nuts
  • 2 tablespoons Whole milk
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 clove Garlic

Directions

Step 1

Peel and dice the potato into small cubes, about 1/2 inch in size.

Step 2

Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Add the diced potatoes and sauté for 8-10 minutes until golden brown and tender. Remove from the skillet and set aside.

Step 3

In the same skillet, cook the bacon slices over medium heat until crispy, about 6-8 minutes. Remove and crumble the bacon into small pieces. Discard excess grease, but leave about 1 teaspoon in the skillet.
