Ingredients

  • 4 large eggs
  • 2 tablespoons milk
  • 0.25 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon unsalted butter
  • 0.5 cup sweet corn kernels
  • 0.5 cup smoked mozzarella
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh chives

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined and slightly frothy.

Step 2

Prepare the smoked mozzarella by shredding or finely chopping it. Chop the parsley and chives, and set everything aside.

Step 3

Heat a nonstick skillet over medium heat and add the butter, letting it melt and coat the bottom of the pan.

Step 4

Add the sweet corn kernels to the skillet and sauté them for 2-3 minutes until they are tender and lightly browned.

Step 5

Reduce the heat to medium-low, and pour the egg mixture into the skillet, tilting the pan to spread it evenly.

Step 6

Sprinkle the smoked mozzarella evenly over one half of the omelet, then add the sautéed corn and sprinkle in the fresh parsley and chives.

Step 7

Cook the omelet for 3-4 minutes, or until the edges are set but the center is still slightly soft. Use a spatula to carefully fold the omelet in half, covering the filling.

Step 8

Continue cooking for 1-2 minutes until the cheese is melted and the omelet is cooked through.

Step 9

Slide the omelet onto a plate, cut into portions if desired, and serve immediately. Garnish with extra fresh herbs if preferred.
