Ingredients

  • 500 grams lamb (bone-in, cubed)
  • 200 grams yellow lentils
  • 1 medium onion, finely chopped
  • 2 tablespoons tomato paste
  • 4 whole cardamom pods
  • 1 teaspoon ground turmeric
  • 0.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground black pepper
  • 3 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 6 cups water
  • 2 whole dried lime (loomi), pierced
  • 1 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 4 pieces lime wedges (for serving)

Directions

Step 1

Rinse the yellow lentils under cold running water until the water runs clear. Set aside.

Step 2

In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and garlic, sautéing until fragrant and the onion becomes translucent, about 2-3 minutes.

Step 3

Add the lamb cubes to the pot and brown them on all sides, stirring occasionally, for about 5-7 minutes.

Step 4

Stir in the tomato paste, cardamom pods, turmeric, cinnamon, and black pepper. Cook for 1-2 minutes to release the spices' aroma.

Step 5

Pour in the water and bring the mixture to a boil. Skim off any foam that rises to the surface with a spoon.

Step 6

Add the rinsed lentils, pierced dried limes (loomi), and salt to the pot. Reduce the heat to low, cover, and let the soup simmer for 45-50 minutes, or until the lamb is tender and the lentils are fully cooked.

Step 7

Taste the soup and adjust the seasoning as needed. Remove the dried limes before serving, if preferred.

Step 8

Ladle the soup into bowls and garnish with fresh cilantro. Serve with lime wedges on the side for an added tangy flavor.

Step 9

Enjoy your homemade, aromatic Oman Soup!
