Ingredients

  • 4 pieces salted herring fillets (skin and bones removed)
  • 4 pieces medium potatoes
  • 2 small red beet (cooked and peeled)
  • 1 medium red onion
  • 1 medium sour apple (e.g., Granny Smith)
  • 4 medium pickles
  • 4 tablespoons mayonnaise
  • 2 tablespoons Greek yogurt
  • 1 teaspoon white vinegar
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons fresh dill (for garnish)

Directions

Step 1

Bring a pot of water to a boil. Add the potatoes (skin on) and cook for about 25-30 minutes or until tender. Remove the potatoes and set them aside to cool.

Step 2

While the potatoes cook, dice the cooked and peeled red beets into small cubes. Set aside.

Step 3

Finely dice the red onion, sour apple (peeled and cored), and pickles. Keep each ingredient separate for now.

Step 4

Once the potatoes have cooled enough to handle, peel them and cut them into small cubes.

Step 5

Cut the salted herring fillets into bite-sized pieces.

Step 6

In a large bowl, combine the diced potatoes, beets, red onion, apple, pickles, and herring.

Step 7

In a small bowl, mix the mayonnaise, Greek yogurt, white vinegar, salt, and black pepper until smooth. Adjust seasoning to taste.

Step 8

Pour the dressing over the salad ingredients and gently toss to combine, ensuring everything is evenly coated.

Step 9

Transfer the salad to a serving dish and garnish with fresh dill.

Step 10

Cover the salad and let it chill in the refrigerator for at least 1 hour before serving. This allows the flavors to meld together beautifully.
