Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 0.25 teaspoons salt
  • 1 cup milk
  • 4 eggs
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 2 tablespoons powdered sugar
  • 1 cup fresh fruit (berries, bananas, or your choice)
  • 0.25 cup maple syrup

Directions

Step 1

Preheat the oven to 425°F (220°C). Position a rack in the center of the oven.

Step 2

In a medium mixing bowl, whisk together the all-purpose flour, granulated sugar, and salt until well combined.

Step 3

In a separate bowl, whisk together the milk, eggs, and vanilla extract until smooth. Gradually add the wet mixture to the dry ingredients, whisking until you have a lump-free batter.

Step 4

Place a 10-inch oven-safe skillet or baking dish into the preheated oven to warm for about 2 minutes.

Step 5

Carefully remove the skillet from the oven and add the unsalted butter. Swirl the butter around until fully melted and the pan is well-coated.

Step 6

Pour the batter into the hot skillet and immediately place it back into the oven.

Step 7

Bake the pancake for 20–25 minutes, or until it is golden brown, puffed up, and has slightly crispy edges.

Step 8

Carefully remove the skillet from the oven. The pancake will deflate slightly as it cools — this is normal.

Step 9

Dust the pancake generously with powdered sugar and top with fresh fruit of your choice.

Step 10

Slice into wedges, drizzle with maple syrup, and serve warm.
