Ingredients

  • 300 grams cherry tomatoes
  • 150 grams kalamata olives
  • 1 large cucumber
  • 0.5 medium red onion
  • 10 grams fresh parsley
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 50 grams feta cheese (optional)

Directions

Step 1

Rinse the cherry tomatoes and cut them in half. Add them to a large salad bowl.

Step 2

Slice the kalamata olives in half (if not already pitted and halved) and add them to the bowl.

Step 3

Peel the cucumber, if desired, and dice it into bite-sized pieces. Add to the bowl.

Step 4

Slice the red onion thinly and add it to the salad.

Step 5

Finely chop the fresh parsley and sprinkle it over the vegetables.

Step 6

In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper to make the dressing.

Step 7
