Ingredients

  • 1 cup long-grain rice
  • 2 cups water
  • 0.5 cup pitted green olives
  • 0.5 cup pitted black olives
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 tablespoons parsley
  • 1 tablespoon dill (optional)
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Rinse the rice thoroughly under cold water until the water runs clear. This helps remove excess starch for fluffy rice.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the rice, a pinch of salt, and reduce heat to low. Cover and simmer for 15-18 minutes, or until the rice is cooked and all the water is absorbed.

While the rice cooks, chop the pitted green and black olives into small pieces. Mince the garlic and finely chop the parsley and dill (if using).
