Ingredients

  • 4 pieces (6 ounces each) Salmon fillets
  • 4 tablespoons Extra-virgin olive oil
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley, chopped
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 1 medium head Cauliflower, chopped into florets
  • 2 tablespoons Unsalted butter
  • 0.25 cups Heavy cream
  • 0.25 teaspoons Nutmeg, ground
  • 2 cups Vegetable or chicken broth
  • 1 teaspoon Fresh thyme (optional, for garnish)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with olive oil.

Step 2

Pat the salmon fillets dry with a paper towel and season both sides with 0.5 teaspoons of salt and black pepper.

Step 3

In a small bowl, mix 2 tablespoons of olive oil, minced garlic, lemon juice, and parsley. Brush this mixture over the salmon fillets.

Step 4

Place the seasoned salmon fillets skin-side down on the prepared baking sheet. Roast in the preheated oven for 12-15 minutes or until the salmon is opaque and flakes easily with a fork.

Step 5

While the salmon is roasting, prepare the cauliflower purée. In a medium saucepan, bring 2 cups of broth to a boil. Add the cauliflower florets and cook for around 10-12 minutes, or until the cauliflower is tender and can be pierced with a fork.

Step 6

Drain the cauliflower and transfer it to a blender or food processor. Add butter, heavy cream, and ground nutmeg. Season with the remaining 0.5 teaspoons of salt. Blend until smooth and creamy, scraping down the sides as necessary.

Step 7

Taste the purée and adjust seasoning if needed. If the purée is too thick, add a splash of the reserved cooking broth and blend again.

Step 8

To serve, spoon a generous portion of cauliflower purée onto each plate and top with a roasted salmon fillet. Drizzle with the remaining olive oil and garnish with fresh thyme if desired.

Step 9

Serve immediately and enjoy this delicious and healthy meal.
