  • 3 large Eggs
  • 0.75 cup Extra-virgin olive oil
  • 2 teaspoons Vanilla extract
  • 2 cups Grated carrots
  • 0.5 cup Crushed pineapple (drained)
  • 0.5 cup Chopped walnuts or pecans
  • 8 ounces Cream cheese
  • 0.5 cup Unsalted butter (softened)
  • 2.5 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan or two 9-inch round cake pans.

In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Set aside.
