  • 12 oz spaghetti
  • 4 oz pancetta
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 medium red onion, finely diced
  • 0.5 tsp red pepper flakes
  • 28 oz canned crushed tomatoes
  • 0.5 cup white wine
  • 1 tsp sugar
  • 0.5 cup parmesan cheese, freshly grated
  • 2 tbsp parsley, chopped (optional)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the pancetta and cook until crispy, about 4-5 minutes. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Step 3

Add the minced garlic and diced onion to the skillet. Cook over medium heat, stirring frequently, until softened and translucent, about 3-4 minutes.

Step 4

Stir in the red pepper flakes and cook for an additional 30 seconds to release their flavor.

Step 5

Deglaze the skillet by pouring in the white wine and scraping up any browned bits from the bottom of the pan. Let the wine simmer and reduce by half, about 2-3 minutes.
