Ingredients

  • 1 cup Kalamata olives, pitted
  • 0.5 cup Sun-dried tomatoes in oil, drained
  • 2 Garlic cloves, minced
  • 1 tablespoon Capers, drained
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Lemon juice
  • 2 tablespoons Extra virgin olive oil
  • 0.25 teaspoon Ground black pepper
  • 12 leaves Endive leaves

Directions

Step 1

Place the Kalamata olives, sun-dried tomatoes, minced garlic, and capers in the bowl of a food processor.

Step 2

Pulse the mixture a few times until it is coarsely chopped, scraping down the sides as needed.

Step 3

Add the parsley, lemon juice, and ground black pepper to the food processor. Pulse again until well combined but still slightly chunky.

Step 4

With the food processor running, slowly drizzle in the olive oil until the mixture comes together as a thick paste. Be careful not to over-process, as you want some texture in the tapenade.

Step 5

Taste the tapenade and adjust seasoning if needed, adding a pinch of salt or more lemon juice as preferred.

Step 6

Spoon a small dollop of tapenade onto each endive leaf, arranging them on a serving platter.

Step 7

Serve immediately as a fresh and elegant appetizer.
