  • 3 cups Cooked chicken breast, shredded
  • 2 cups Red enchilada sauce
  • 1 cup Sour cream
  • 2 cups Shredded Mexican blend cheese
  • 8 Flour tortillas (8-inch)
  • 1 4-ounce can Diced green chiles (optional)
  • 2 tablespoons Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a light coat of oil.

Step 2

In a large mixing bowl, combine the shredded chicken, 1 cup of red enchilada sauce, sour cream, and diced green chiles if using. Mix until well combined.

Step 3

Spread 1/4 cup of enchilada sauce across the bottom of the prepared baking dish to prevent sticking.
