Ingredients

  • 500 grams Potatoes
  • 150 grams Cheddar cheese (grated)
  • 30 grams Unsalted butter
  • 1 large Egg yolk
  • 50 grams All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.25 teaspoons Nutmeg (optional, grated)
  • 2 tablespoons Vegetable oil or butter (for frying)

Directions

Step 1

Peel the potatoes and cut them into even-sized chunks. Place them in a large pot, cover with cold water, and add a pinch of salt.

Step 2

Bring the water to a boil and cook the potatoes until tender, about 15-20 minutes. Check doneness by piercing with a fork; it should glide through easily.

Step 3

Drain the potatoes thoroughly and return them to the pot. Let them steam dry for 1-2 minutes.

Step 4

Mash the potatoes until smooth using a potato masher or ricer. Allow them to cool slightly.

Step 5

In a large mixing bowl, combine the mashed potatoes, grated cheddar cheese, unsalted butter, egg yolk, all-purpose flour, salt, pepper, and nutmeg if using. Mix until well combined.

Step 6

Divide the mixture into 8 equal portions. Shape each portion into a patty approximately 1 cm thick.

Step 7

Heat the vegetable oil or butter in a large skillet over medium heat. Once hot, add the potato cakes in batches, ensuring they don’t overcrowd the pan.

Step 8

Cook the cakes for 3-4 minutes on each side or until golden brown and crispy. Use a spatula to flip them gently.

Step 9

Once cooked, transfer the cakes to a paper-towel-lined plate to drain any excess oil.

Step 10

Serve the Old Sussex Potato Cheese Cakes warm as a snack or side dish, accompanied by your favorite chutney, relish, or a dollop of sour cream.
