Ingredients

  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups clam juice
  • 0.5 cups heavy cream
  • 10 ounces canned minced clams (including juice)
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • 0.25 teaspoons red pepper flakes
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cups parmesan cheese, grated (optional)
  • 12 ounces spaghetti

Directions

Step 1

Bring a large pot of salted water to boil and cook the spaghetti according to package instructions. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

Step 2

In a large skillet, melt the butter and olive oil over medium heat.

Step 3

Add the chopped onion and sauté for 3-4 minutes, until softened and translucent. Stir in the minced garlic and cook for another 1 minute, being careful not to burn it.

Step 4

Sprinkle the flour into the skillet and stir constantly for 1-2 minutes to create a roux.

Step 5

Gradually whisk in the clam juice, ensuring there are no lumps of flour. Allow the mixture to simmer and thicken for about 3 minutes.

Step 6

Stir in the heavy cream and bring the mixture to a gentle simmer.

Step 7

Add the minced clams (with their juice), lemon juice, oregano, red pepper flakes, salt, and black pepper. Stir well and let cook for 5 minutes to meld the flavors.

Step 8

If the sauce is too thick, thin it out slightly with the reserved pasta water, stirring until the desired consistency is reached.

Step 9

Remove the skillet from the heat and mix in the fresh parsley.

Step 10

Serve the clam sauce over the cooked spaghetti. Garnish with additional parsley and grated parmesan cheese if desired.
