Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 6 large ripe tomatoes, roughly chopped
  • 3 cups chicken or vegetable stock
  • 2 tablespoons tomato paste
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup fresh basil leaves, roughly chopped
  • 0.5 cup heavy cream
  • 0.25 cup parmesan cheese, freshly grated (optional, for garnish)
  • 0 crusty bread or croutons (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

Step 3

Add the minced garlic and cook for another minute, being careful not to let it burn.

Step 4

Stir in the chopped tomatoes, chicken or vegetable stock, tomato paste, sugar, salt, and black pepper.

Step 5

Bring the mixture to a simmer and let it cook for 20 minutes, allowing the flavors to meld and the tomatoes to soften completely.

Step 6

Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, let the soup cool slightly and carefully blend it in batches in a countertop blender.

Step 7

Return the soup to the pot (if using a countertop blender) and place it over low heat.

Step 8

Stir in the fresh basil and heavy cream, allowing the soup to heat through but not boil, about 5 minutes.

Step 9

Taste and adjust seasoning with additional salt or pepper, if needed.

Step 10

Serve hot, garnished with freshly grated parmesan cheese and accompanied by crusty bread or croutons, if desired.
