Directions

Step 1

In a medium saucepan, combine heavy cream, whole milk, and half the sugar. Heat over medium-low heat until the mixture is hot but not boiling (about 175°F or until it begins to steam). Stir occasionally to prevent burning.

Step 2

In a medium bowl, whisk together the egg yolks, remaining sugar, and salt until the mixture is pale and slightly thickened, about 1-2 minutes.

Step 3

Gradually temper the egg mixture by slowly adding 1/2 cup of the warm cream mixture while whisking constantly. This prevents the eggs from scrambling.

Step 4

Pour the tempered egg mixture back into the saucepan with the remaining cream mixture. Cook over medium heat, stirring constantly with a wooden spoon or silicone spatula, until the custard thickens slightly and coats the back of the spoon (about 170-175°F). Do not let it boil.
