Ingredients

  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, at room temperature
  • 1.5 cups granulated sugar
  • 2 pieces large eggs
  • 1 10.75-ounce can canned tomato soup
  • 0.25 cups water
  • 0.5 cups raisins (optional)
  • 0.5 cups chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan or two 9-inch round pans.

Step 2

In a medium bowl, whisk together the flour, baking soda, ground cinnamon, nutmeg, cloves, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and sugar together using an electric mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs to the butter mixture, one at a time, beating well after each addition.

Step 5

In a small bowl or measuring cup, combine the tomato soup and water. Stir until smooth.

Step 6

Gradually add the dry ingredients to the wet mixture, alternating with the tomato soup mixture. Start and end with the dry ingredients. Mix until just incorporated. Avoid overmixing.

Step 7

If using, fold in the raisins and walnuts gently with a spatula.

Step 8

Pour the batter evenly into the prepared pan(s) and smooth the top with a spatula.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 11

Optional: Frost with cream cheese frosting or dust with powdered sugar before serving.
