  • 3 pounds beef chuck roast
  • 2 tablespoons olive oil

  • 2 large yellow onions
  • 4 medium carrots
  • 1.5 pounds gold potatoes
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Directions

Step 1

Season the beef chuck roast on all sides with salt, black pepper, garlic powder, and onion powder.

In a large skillet, heat olive oil over medium-high heat. Sear the beef roast for 3-4 minutes on each side until browned. Remove and set aside.

Peel and slice the onions into thick wedges. Cut the carrots into 2-inch pieces and halve the gold potatoes, leaving the skin on.
