Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 2 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter
  • 0.75 cup light brown sugar
  • 0.25 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup raisins
  • 0.5 cup chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper or lightly grease it to prevent sticking.

Step 2

In a medium bowl, whisk together the rolled oats, flour, cinnamon, nutmeg, cloves, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the unsalted butter, light brown sugar, and granulated sugar together until light and fluffy. This will take about 2-3 minutes using an electric mixer.

Step 4

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry ingredients into the wet mixture, mixing on low speed until just combined. Be careful not to overmix.

Step 6

Fold in the raisins and chopped nuts (if using) using a rubber spatula, ensuring they are evenly distributed throughout the batter.

Step 7

Transfer the batter into the prepared baking pan, spreading it out evenly with a spatula or the back of a spoon.

Step 8

Bake in the preheated oven for 22-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Step 9

Allow the bars to cool completely in the pan on a wire rack. Once cooled, cut into 12 evenly portioned squares or rectangles.

Step 10

Serve and enjoy these delicious, spiced oatmeal raisin bars as a snack or dessert. Store leftovers in an airtight container at room temperature for up to 5 days.
