Ingredients

  • 1 pound ground lamb
  • 1 medium onion, diced
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 3 cups mashed potatoes
  • 2 tablespoons butter
  • 1 cup milk
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup shredded cheddar cheese (optional, for topping)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Peel and boil potatoes in salted water for 15-20 minutes until tender. Drain and mash with butter, milk, and a pinch of salt and pepper until smooth. Set aside.

Step 3

Heat a large skillet over medium heat and cook the ground lamb until browned, about 5-7 minutes. Drain excess fat if needed.

Step 4

Add diced onion and carrots to the skillet and sauté for 5 minutes, until softened.

Step 5

Stir in minced garlic and cook for 1 minute until fragrant.

Step 6

Add tomato paste and stir to coat the mixture evenly. Cook for 2 minutes.

Step 7

Sprinkle flour over the mixture, stir well, and cook for another minute to remove the raw taste of the flour.

Step 8

Gradually add beef broth while stirring continuously to create a smooth sauce.

Step 9

Mix in Worcestershire sauce, dried thyme, and frozen peas. Season with salt and black pepper to taste. Let the mixture simmer for 5 minutes until slightly thickened.

Step 10

Transfer the meat and vegetable mixture to a 9x13-inch baking dish, spreading it out evenly.

Step 11

Top the meat mixture with the mashed potatoes, spreading them evenly with a spatula. Use the tines of a fork to create decorative ridges on the surface.

Step 12

If desired, sprinkle shredded cheddar cheese over the top for a cheesy crust.

Step 13

Bake in the preheated oven for 25 minutes, or until the top is golden brown and the edges are bubbling.

Step 14

Allow the Shepherd's Pie to cool for 5-10 minutes before serving. Enjoy!
