Ingredients

  • 4 links Italian sausage
  • 2 large Red bell peppers
  • 2 large Green bell peppers
  • 2 medium Yellow onion
  • 3 cloves Garlic cloves
  • 2 tablespoons Olive oil
  • 1 28-ounce can Crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Red pepper flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the Italian sausage links and cook until browned on all sides, about 5 minutes. Remove the sausages from the skillet and set them aside on a plate.

Step 3

Add the remaining tablespoon of olive oil to the skillet. Slice the red and green bell peppers into thin strips, and slice the yellow onions into half-moons. Add them to the skillet and sauté until they become soft and slightly caramelized, about 8-10 minutes.

Mince the garlic cloves and add them to the skillet with the peppers and onions. Sauté for 1-2 minutes, until fragrant.
