  • 1 cup Granulated sugar
  • 1 large Egg
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Lemon zest
  • 0.25 cup Additional granulated sugar for rolling

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the egg, vanilla extract, fresh lemon juice, and lemon zest until well combined.

Step 5

Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Step 6

Scoop tablespoons of dough and roll them into balls with your hands.

Step 7

Roll each dough ball in the additional granulated sugar to coat completely.

Step 8

Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

Step 9

Use the bottom of a glass to gently press down each dough ball to slightly flatten.

Step 10

Bake in the preheated oven for 8-10 minutes, or until the edges are lightly golden but the centers are still soft.

Step 11

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
