Ingredients

  • 6 cups Jersey peaches, peeled, pitted, and sliced
  • 0.75 cup Granulated sugar (for filling)
  • 0.25 cup Brown sugar
  • 2 tablespoons Lemon juice
  • 2 tablespoons Cornstarch
  • 1 teaspoon Ground cinnamon
  • 1.5 cups All-purpose flour
  • 0.5 cup Granulated sugar (for topping)
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, cold and cubed
  • 0.5 cup Boiling water
  • 0.25 teaspoon Ground cinnamon (for topping)
  • 2 tablespoons Granulated sugar (for sprinkling)

Directions

Step 1

Preheat the oven to 375°F (190°C). Grease a 9x13-inch baking dish and set aside.

Step 2

In a large bowl, combine the sliced peaches, 3/4 cup granulated sugar, 1/4 cup brown sugar, lemon juice, cornstarch, and 1 teaspoon ground cinnamon. Toss until the peaches are evenly coated and transfer the mixture to the prepared baking dish.

Step 3

In a medium bowl, whisk together the flour, 1/2 cup granulated sugar, baking powder, and salt. Using a pastry cutter or two forks, cut in the cubed cold butter until the mixture resembles coarse crumbs.

Step 4

Slowly add the boiling water to the flour mixture, stirring just until the dough comes together. Be careful not to overmix.

Step 5

Drop spoonfuls of the dough over the peach filling, spreading slightly to cover most of the surface but leaving some gaps for steam to escape.

Step 6

In a small bowl, mix 2 tablespoons of granulated sugar with 1/4 teaspoon ground cinnamon. Sprinkle this mixture evenly over the cobbler topping.

Step 7

Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the peaches are bubbling at the edges.

Step 8

Remove from the oven and let cool for at least 10-15 minutes. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
