Ingredients

  • 3/4 cup Unsalted butter
  • 3/4 cup Packed brown sugar
  • 2/3 cup Unsulfured molasses
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 3 1/4 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 tablespoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • 1/4 teaspoon Ground allspice
  • 1/4 teaspoon Ground cloves
  • 1/2 teaspoon Salt
  • 0 Optional, for sprinkling Granulated sugar

Directions

Step 1

In a large mixing bowl, cream together the butter and brown sugar using a hand or stand mixer until light and fluffy, about 2 minutes.

Step 2

Beat in the molasses, egg, and vanilla extract until well combined.

Step 3

In a separate bowl, whisk together the flour, baking soda, ground ginger, cinnamon, allspice, cloves, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until fully incorporated. The dough will be thick and slightly sticky.

Step 5

Divide the dough into two portions, flatten each into a disk, and wrap tightly with plastic wrap. Chill in the refrigerator for at least 2 hours, or overnight, to firm up.

Step 6

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Step 7

Roll out the dough on a lightly floured surface to about 1/4-inch thickness. Use cookie cutters to cut out desired shapes, and place the cookies about 1 inch apart on the prepared baking sheets.

Step 8

If desired, sprinkle granulated sugar on top for added sweetness and texture.

Step 9

Bake in preheated oven for 8-10 minutes, or until the edges are set and the tops are slightly puffed. Avoid overbaking to keep them soft.

Step 10

Allow cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Decorate as desired with icing, candies, or leave them plain for a simple, classic look. Enjoy!
