Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 piece Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Almond extract (optional)
  • 3 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 2 cups Powdered sugar
  • 2 tablespoons Milk
  • 0.5 teaspoon Vanilla extract (for frosting)
  • 0 Food coloring (optional)
  • 0 Sprinkles (optional)

Directions

Step 1

In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 2-3 minutes.

Step 2

Add the egg, vanilla extract, and almond extract (if using) to the butter mixture, and mix until fully combined.

Step 3

In a separate medium-sized bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing just until the dough starts to come together. If the dough is too sticky, add 1 tablespoon of flour at a time until it's easy to handle.

Step 5

Divide the dough into two equal portions, flatten them into disks, and wrap them in plastic wrap. Chill in the refrigerator for at least 1 hour or up to overnight.

Step 6

Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 7

On a lightly floured surface, roll out one portion of the chilled dough to about 1/4-inch thickness. Cut out shapes using cookie cutters, and transfer them to the prepared baking sheets, spacing them about 1 inch apart.

Step 8

Bake the cookies in the preheated oven for 8-10 minutes, or until the edges are just starting to turn golden. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

To make the frosting, whisk together the powdered sugar, milk, and vanilla extract in a small bowl until smooth. If desired, divide the frosting into separate bowls and add food coloring to each bowl.

Step 10

Once the cookies are completely cooled, spread or pipe the frosting onto the tops of the cookies. Decorate with sprinkles if desired, and let the frosting set for about 30 minutes before serving or storing.

Step 11

Store the cookies in an airtight container at room temperature for up to 1 week.
