Ingredients

  • 2 cups Buttermilk
  • 0.5 cups Water
  • 4 tablespoons Unsalted butter
  • 3 tablespoons Granulated sugar
  • 2.25 teaspoons Active dry yeast
  • 6 cups Bread flour (or all-purpose flour)
  • 2 teaspoons Salt

Directions

Step 1

In a small saucepan, combine buttermilk, water, and butter. Warm over low heat until the butter is melted and the mixture is about 105°F to 110°F. Remove from heat and stir in sugar to dissolve. Let the mixture cool slightly if it is too hot for the yeast.

Step 2

In a small bowl, sprinkle the yeast over the warm buttermilk mixture. Let it sit for 5-10 minutes until foamy and activated.

Step 3

In a large mixing bowl or the bowl of a stand mixer, combine 3 cups of flour and the salt. Pour the buttermilk-yeast mixture into the bowl and stir until combined.

Gradually add the remaining flour, 1 cup at a time, mixing well after each addition. If using a stand mixer, knead the dough on low speed for about 8 minutes. If kneading by hand, turn the dough out onto a lightly floured surface and knead for about 10 minutes, until the dough is smooth and elastic.

Remove the loaves from the oven and let them cool in the pans for 5 minutes. Turn the bread out onto a wire rack to cool completely before slicing.
