Ingredients

  • 8 cups day-old bread (French or brioche, cubed)
  • 3 cups whole milk
  • 1 cup heavy cream
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter (melted)
  • 1 pinch of salt
  • 1 cup granulated sugar (for caramel sauce)
  • 4 tablespoons unsalted butter (for caramel sauce)
  • 0.5 cup heavy cream (for caramel sauce)
  • 1 pinch of salt (for caramel sauce)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking dish with butter or nonstick spray.

Step 2

Place the cubed bread in a large mixing bowl.

Step 3

In a medium saucepan, heat the milk and heavy cream over medium heat until warm but not boiling.

Step 4

In a separate large bowl, whisk together the granulated sugar, brown sugar, eggs, vanilla extract, cinnamon, melted butter, and a pinch of salt.

Step 5

Slowly whisk the warm milk mixture into the egg mixture to create the custard.

Step 6

Pour the custard over the cubed bread and gently toss to coat. Let it sit for 15-20 minutes to allow the bread to soak up the custard.

Step 7

Transfer the bread mixture into the prepared baking dish, spreading it out evenly.

Step 8

Bake in the preheated oven for 50-60 minutes, or until the top is golden brown and the center is set. Let cool slightly before serving.

Step 9

While the bread pudding is baking, make the caramel sauce. In a medium saucepan, heat the granulated sugar over medium heat, stirring frequently, until melted and amber in color.

Step 10

Stir in the butter until completely melted, then slowly pour in the heavy cream while stirring continuously. Be careful as the mixture will bubble vigorously.

Step 11

Add a pinch of salt and continue to cook for 1-2 minutes until smooth. Remove from heat and let it cool slightly.

Step 12

Serve warm slices of bread pudding drizzled with the caramel sauce over the top. Enjoy!
