Ingredients

  • 1 pound Shrimp (peeled and deveined, medium-size)
  • 2 teaspoons Old Bay Seasoning
  • 2 stalks Celery (finely diced)
  • 0.25 cup Red onion (finely diced)
  • 0.5 cup Mayonnaise
  • 1 tablespoon Lemon juice (freshly squeezed)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper (freshly ground)
  • 2 cups Mixed greens or lettuce (optional, for serving)

Directions

Step 1

Bring a medium pot of salted water to a boil. Add 1 teaspoon of Old Bay seasoning to the water.

Step 2

Add the shrimp to the boiling water and cook for 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook.

Step 3

Drain the shrimp and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for 5 minutes.

Step 4

Once cooled, pat the shrimp dry with a paper towel and chop them into bite-sized pieces if desired.

Step 5

In a large mixing bowl, combine diced celery, red onion, mayonnaise, lemon juice, fresh parsley, salt, black pepper, and the remaining 1 teaspoon of Old Bay seasoning. Mix well to combine.

Step 6

Add the shrimp to the bowl and gently toss until evenly coated with the dressing.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.

Step 8

Serve the shrimp salad chilled on a bed of mixed greens or lettuce, as a sandwich filling, or with crackers.
