Ingredients

  • 4 tablespoons Butter
  • 1 large Yellow onion, finely chopped
  • 2 Celery stalks, finely diced
  • 3 Garlic cloves, minced
  • 1 tablespoon All-purpose flour
  • 4 cups Chicken or seafood stock
  • 2 cups Heavy cream
  • 3 medium Potatoes, peeled and diced
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 Bay leaf
  • 1 pound Shrimp, peeled and deveined
  • 2 cans Canned clams with juice
  • 2 tablespoons Fresh parsley, chopped
  • 0 Crusty bread, for serving (optional)

Directions

Step 1

In a large pot or Dutch oven, melt the butter over medium heat.

Step 2

Add the chopped onion and celery. Sauté for 5-7 minutes until the vegetables are softened and translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Sprinkle the flour over the vegetables and stir well to form a roux. Cook for 2-3 minutes, stirring constantly, until the flour is lightly golden.

Step 5

Gradually pour in the chicken or seafood stock, whisking constantly to prevent lumps.

Step 6

Add the diced potatoes, Old Bay seasoning, salt, black pepper, and bay leaf. Stir well to combine.

Step 7

Bring the mixture to a boil, then reduce the heat to low. Simmer uncovered for 15-20 minutes or until the potatoes are tender.

Step 8

Stir in the heavy cream and return to a gentle simmer.

Step 9

Add the shrimp and canned clams (with their juice) to the pot. Cook for 5-7 minutes or until the shrimp are pink and fully cooked.

Step 10

Discard the bay leaf and taste the chowder, adjusting the seasoning if needed.

Step 11

Garnish with fresh parsley and serve warm with crusty bread, if desired.
