Ingredients

  • 4 cups Cooked white rice (preferably day-old)
  • 1 pound Lump crabmeat
  • 2 pieces Large eggs
  • 1 medium Green bell pepper, diced
  • 1 medium Red bell pepper, diced
  • 1 medium Yellow onion, diced
  • 3 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 2 teaspoons Sesame oil
  • 2 tablespoons Cooking oil (vegetable or canola)
  • 3 stalks Green onions, chopped
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Cayenne pepper (optional, for heat)

Directions

Step 1

Heat 1 tablespoon of the cooking oil in a large skillet or wok over medium-high heat.

Step 2

Crack the eggs into the skillet, scrambling them quickly as they cook. Once scrambled, remove the eggs and set them aside.

Step 3

Add the remaining 1 tablespoon of cooking oil to the skillet. Toss in the diced onion, green bell pepper, and red bell pepper. Cook for 3-5 minutes, stirring frequently, until the vegetables are softened.

Step 4

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Add the lump crabmeat to the skillet, gently folding it into the vegetable mixture. Season with salt, black pepper, and cayenne pepper (if using). Cook for 2-3 minutes, being careful not to break up the crabmeat too much.

Step 6

Stir in the cooked rice, breaking up any clumps as you mix it with the vegetable and crabmeat mixture. Cook for 5 minutes, stirring occasionally, allowing the rice to be evenly heated and lightly fried.

Step 7

Drizzle the soy sauce and sesame oil over the rice, stirring well to combine. Adjust seasoning if necessary.

Step 8

Return the scrambled eggs to the skillet, mixing them into the rice. Cook for another 1-2 minutes until everything is heated through.

Step 9

Remove the skillet from heat and sprinkle the chopped green onions over the dish for garnish.

Step 10

Serve hot and enjoy this delicious Ol' Fuskie Fried Crab Rice with family and friends!
