Ingredients

  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.75 cup Dashi stock or water
  • 2 large Eggs
  • 2 cups Cabbage
  • 2 stalks Green onions
  • 6 slices Cooked pork belly or bacon
  • 0.25 cup Okonomi sauce (store-bought or homemade)
  • 0.25 cup Japanese mayonnaise
  • 0.25 cup Bonito flakes (katsuobushi)
  • 1 teaspoon Seaweed flakes (aonori)
  • 2 tablespoons Vegetable oil
  • 0 as desired Optional toppings (cheese, pickled ginger, etc.)

Directions

Step 1

In a large mixing bowl, sift together the all-purpose flour and baking powder.

Step 2

Gradually whisk in the dashi stock (or water) until the batter is smooth and free of lumps.

Step 3

Add the eggs to the batter and whisk until fully incorporated.

Step 4

Finely shred the cabbage and chop the green onions, then fold them into the batter.

Step 5

Preheat a large nonstick skillet or griddle over medium heat and add 1 tablespoon of vegetable oil.

Pour half the batter into the skillet, spreading it out into a circular pancake shape about 1/2-inch thick.

Lay 3 slices of pork belly or bacon on top of the pancake.
