  • 14 ounces crushed tomatoes
  • 2 cups, chopped spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 pieces large eggs
  • 0.25 cup, crumbled feta cheese
  • 2 tablespoons, chopped fresh cilantro or parsley
  • 4 slices, for serving crusty bread

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the finely chopped onion and diced red bell pepper to the skillet. Sauté for 5-7 minutes until softened.

Stir in the minced garlic, cumin powder, paprika, and cayenne pepper. Cook for 1 minute until fragrant.

Pour in the crushed tomatoes and bring the mixture to a simmer. Allow to cook for 7-8 minutes, stirring occasionally, until slightly thickened.
