Ingredients

  • 2 pounds pork ribs
  • 4 pieces pasilla chilies
  • 3 pieces garlic cloves
  • 1 medium white onion
  • 2 medium ripe tomatoes
  • 3 pieces whole cloves
  • 5 pieces black peppercorns
  • 1 small cinnamon stick
  • 2 tablespoons vegetable oil
  • 4 cups chicken or pork stock
  • 2 teaspoons salt
  • 1 bunch fresh cilantro
  • 4 pieces lime wedges

Directions

Step 1

1. Prepare the pasilla chilies by removing the stems and seeds. Toast them lightly in a dry skillet over medium heat for 1-2 minutes until fragrant. Be careful not to burn them.

Step 2

2. Soak the toasted chilies in hot water for 15 minutes until softened. Drain and set aside.

Step 3

3. Cut the pork ribs into 2-inch sections. Season generously with 1 teaspoon of salt.

Step 4

4. Heat 1 tablespoon of vegetable oil in a large pot over medium-high heat. Sear the pork ribs until browned on all sides, then remove and set aside.

Step 5

5. In the same pot, add the remaining 1 tablespoon of oil and sauté the garlic cloves and chopped onion until softened and fragrant, about 5 minutes.

Step 6

6. Blend the softened chilies, garlic, onion, tomatoes, cloves, peppercorns, and cinnamon stick with 1 cup of stock until smooth.

Step 7

7. Strain the blended mixture through a fine-mesh sieve back into the pot to remove any solids.

Step 8

8. Add the pork ribs back into the pot and pour in the remaining 3 cups of stock. Stir to combine.

Step 9

9. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 1.5 hours, or until the ribs are tender and the sauce has thickened. Stir occasionally to prevent sticking.

Step 10

10. Taste and adjust seasoning with additional salt if needed.

Step 11

11. Serve hot, garnished with fresh cilantro and lime wedges on the side. Pair with warm tortillas or rice for a complete meal.
