Ingredients

  • 1 cup unsalted butter
  • 1 cup light brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1.25 cups toffee bits

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, beat the unsalted butter, light brown sugar, and granulated sugar together using a hand or stand mixer until the mixture is light and fluffy, about 2–3 minutes.

Step 3

Add the eggs, one at a time, mixing well after each addition. Then, mix in the vanilla extract.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6

Stir in the old-fashioned rolled oats and toffee bits using a spatula or wooden spoon until evenly dispersed throughout the dough.

Step 7

Using a cookie scoop or tablespoon, drop rounded spoonfuls of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake the cookies in the preheated oven for 10–12 minutes, or until the edges are golden brown and the centers are set.

Step 9

Remove the baking sheets from the oven and let the cookies cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to a week.
