Ingredients

  • 2 cups Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Coconut oil (melted and cooled)
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 large Egg (or flax egg for vegan)
  • 1 cup Raisins

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium bowl, whisk together the rolled oats, all-purpose flour, baking soda, ground cinnamon, and salt. Set aside.

Step 3

In a large mixing bowl, combine the melted and cooled coconut oil, brown sugar, and granulated sugar. Mix until smooth and creamy.

Step 4

Add the vanilla extract and egg (or flax egg) to the wet ingredients. Beat until fully incorporated.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Step 6

Fold in the raisins using a spatula or wooden spoon.

Step 7

Using a tablespoon or cookie scoop, drop dough onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the edges are lightly golden but the centers are still soft.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days.
