Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 0.75 cup brown sugar
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 0.5 cup peanut butter
  • 1 teaspoon pure vanilla extract
  • 1 cup strawberry jam (preferably homemade or low sugar)
  • 0.25 cup chopped peanuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, allowing some of the paper to hang over the edges for easy removal later.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Mix until well combined.

Step 3

In a separate small bowl, stir together the melted butter, peanut butter, and vanilla extract until smooth.

Step 4

Pour the wet mixture into the dry ingredients and stir until evenly combined. The mixture will be crumbly but should hold together when pressed.

Step 5

Take two-thirds of the oatmeal mixture and press it firmly into the bottom of the prepared baking pan to form the crust.

Step 6

Spread the strawberry jam evenly over the crust layer, leaving a small border around the edges to prevent sticking during baking.

Step 7

Crumble the remaining oatmeal mixture over the strawberry layer, ensuring the jam is mostly covered. If desired, sprinkle chopped peanuts on top for added texture.

Step 8

Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and set.

Step 9

Remove from the oven and allow the bars to cool completely in the pan. Once cooled, use the parchment paper to lift the bars out of the pan.

Step 10

Cut into 12 squares or bars and serve. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
