Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup all-purpose flour
  • 3 tablespoons brewer's yeast
  • 2 tablespoons ground flaxseed
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter (softened)
  • 0.5 cup peanut butter (creamy or crunchy)
  • 0.75 cup brown sugar (packed)
  • 0.25 cup granulated sugar
  • 2 units large eggs
  • 2 teaspoons vanilla extract
  • 1 cup dark chocolate chips (optional)
  • 0.5 cup chopped nuts, like almonds or walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the oats, flour, brewer's yeast, flaxseed, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, use a hand or stand mixer to cream together the softened butter, peanut butter, brown sugar, and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Then mix in the vanilla extract.

Step 5

Gradually add the dry ingredients from the medium bowl into the wet ingredients, mixing until just combined. Be careful not to overmix.

Step 6

Fold in the optional chocolate chips and/or chopped nuts if using, ensuring an even distribution throughout the dough.

Step 7

Scoop tablespoon-sized amounts of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten the tops slightly with the back of a spoon or your fingertips.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly undercooked, but they will firm up as the cookies cool.

Step 9

Let the cookies rest on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
