Ingredients

  • 1 cup Rolled oats
  • 1 cup All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Cinnamon
  • 2 tablespoons Brown sugar
  • 2 large Eggs
  • 1.25 cups Milk
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Butter, melted
  • 0.5 cups Peanut butter
  • 2 tablespoons Powdered sugar
  • 2 tablespoons Milk (for spread)

Directions

Step 1

In a blender or food processor, pulse the rolled oats until they resemble a coarse flour. Transfer to a large mixing bowl.

Step 2

Add the all-purpose flour, baking powder, salt, cinnamon, and brown sugar to the bowl. Whisk to combine the dry ingredients.

Step 3

In a separate smaller bowl, beat the eggs, then whisk in the milk, vanilla extract, and melted butter.

Step 4

Slowly pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.

Step 5

Heat a non-stick skillet or griddle over medium heat. Lightly grease with a small amount of butter or cooking spray.

Step 6

Using a 1/4 cup measure, pour batter onto the hot skillet for each pancake. Cook for 2-3 minutes, until bubbles form on the surface, then flip and cook for another 2 minutes until golden brown and cooked through. Repeat with the remaining batter.

Step 7

To make the peanut butter spread, whisk together the peanut butter, powdered sugar, and 2 tablespoons of milk in a small bowl until smooth and creamy. Add additional milk if needed to reach your desired consistency.

Step 8

Serve the pancakes warm with the peanut butter spread drizzled or spread on top. Add optional toppings such as sliced bananas, chopped nuts, or honey if desired.
