Ingredients

  • 1 cup Old-fashioned rolled oats
  • 1 cup All-purpose flour
  • 0.5 cup Brown sugar (packed)
  • 2 teaspoons Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1 cup Unsweetened applesauce
  • 1 large Egg
  • 0.5 cup Milk (dairy or non-dairy)
  • 0.25 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.75 cup Dried cherries

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, baking soda, salt, and ground cinnamon. Stir until well mixed.

Step 3

In a separate medium bowl, whisk together the unsweetened applesauce, egg, milk, vegetable oil, and vanilla extract until smooth.

Step 4

Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this can make the muffins dense.

Step 5

Fold in the dried cherries, ensuring they are evenly distributed throughout the batter.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
