Ingredients

  • 1 cup Amish Friendship Bread Starter
  • 1 cup All-purpose flour
  • 0.5 cup Whole wheat flour
  • 0.5 cup Rolled oats
  • 0.5 cup Bran cereal
  • 0.5 cup Brown sugar
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 2 large Eggs
  • 0.5 cup Vegetable oil
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract
  • 0.5 cup Raisins or chopped nuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups well.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, oats, bran cereal, brown sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

Step 3

In a medium bowl, whisk together the Amish Friendship Bread starter, eggs, vegetable oil, applesauce, and vanilla extract until smooth and well incorporated.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir gently until just combined, being careful not to overmix. If using raisins or nuts, fold them in at this stage.

Step 5

Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.

Step 6

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 7

Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.

Step 8

Serve warm or at room temperature. Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
